1/3 Agiorgitiko, 1/3 Syrah, 1/3 Mavrofilero
Each variety participates by 1/3 in the wine.
Agiorgitiko in acacia barrels, Syrah matures in its wine
sludge in a stainless steel tank and Mavrofilero
in clay amphorae together with its skin for 4 months.
Veil. A detail gave its name to the wine.
The skins of Mavrofileros in order to be immersed in the
amphorae and to be controlled, are found in a fabric (tulpan-veil)
with the help of which we press the mass
at the end by hand in order to get the young wine.
All vineyards are located at an altitude of over 600m.
